If so, you’ll probably love otong soup. People in Nigeria’s Cross River State love this delicious food. It is made with fish, okra, and tomatoes and has a flavour that is sure to please your taste buds.

Needed Ingredient

A variety of meat

Fresh okra

1 tablespoon palm oil

Stockfish, Crayfish

1 onion bulb, Ugu (chopped)

Uziza (chopped)

Scotch bonnet peppers

Cubes for seasoning

Salt

Method

Mix your different kinds of meat with stock, sliced onion, seasoning cubes, and salt in a pot of water. Let it boil until the meat is cooked through.

Wash your okra, cut it up, and set it aside. Soak the smoked fish in hot water to get rid of dirt and set it aside.

Pour in the palm oil and let it cook for 3 minutes. Then, add the pepper and crayfish mixture and let it cook for 5 minutes. Then add the smoked fish and steam it for 2 minutes.

Mix in the chopped okra and let it cook for 2 minutes.

Add the uziza and steam it for 1 minute. Then add the ugu and cook it for 2 minutes.

Serve it with your preferred drink.

The honey-roasted duck makes a beautiful holiday main dish. Still, she is easy enough for any special occasion or Sunday dinner.

Ingredients:

1.3kg whole duck

1 orange

2 tbsp honey

2 sprigs of thyme (2 whole, leaves of 2).

Sea salt and black pepper

Preparation:

Squeeze a little orange juice inside the duck and place two orange halves and two thyme sprigs into the bird’s cavity; season all over with sea salt and black pepper.

Place the duck in a roasting tin in a pre-heated oven at 220 degrees C (Gas 7). Cook for 20 minutes or until the skin begins to crisp, then reduce the heat to 190 degrees C. 

Cook for 40 minutes, then remove the dish from the oven. Drizzle the honey over the duck, sprinkle over the thyme leaves, and put it back in the oven. 

Check it regularly. When the internal temperature reaches 74 degrees, the duck is cooked (which should take around 20 minutes).

Remove it from the oven and serve.

INGREDIENT:

Sweet potatoes

3 tbsp chopped garlic 

Grated cheese

Black pepper

Vegetable oil

Sour cream

Parsley (chopped)

Salt

Method

Peel and put the potatoes and salt into a pot and allow them to boil for 20 minutes until tender. When cooked, drain the water, dice the potatoes into small chunks, then pour them into a mortar and pound them. Add butter and carefully mash so it will not become gummy. Then set it aside.

Beat the cheese until smooth, then stir in the sour cream, minced garlic and black pepper. Taste and add salt if needed, and reserve some cheese for topping.

Transfer the mashed potatoes into a pot and stir in the cheese gently. Grease your pan with butter spread the potatoes into it, and then bake for 45 minutes.

.Pour the cheese and parsley over and transfer to a serving dish.

Cook until the peppers are cooked. Next, add the meat, tomato sauce, chilli sauce, a little sweet soy sauce, fried chicken and sausage. Stir thoroughly until all components are blended equally. Finally, add the cooked spaghetti and mix well. Reduce the heat and cook the spaghetti for about 5–7 minutes until it is cooked through and the spices are absorbed. Turn off the heat, remove the spaghetti and serve immediately while still hot.

Peel off the shrimp, then slice and set aside.

Ingredients Required

Ground ogbono

pumpkin leaves [vegetable], 

meat, 

dried fish [mangala], 

crayfish, 

palm oil, 

onion, 

salt 

Seasoning Cube

bitter leaf.

   Preparation

a. Parboil the meat and crayfish, adding onion, salt and magi. Collect the water from the parboiled meat.

b. Dry a pot on the fire. Add red palm oil and heat to bleach it.

c. Add onion and the ground ogbono and stir well to form a drawing paste.

d. Add the water to the parboiled meat/fish. Stir thoroughly. Add the okra to enhance the thickening and  Cook for 10 minutes.

e. Add the pumpkin, stir and boil for 10 minutes and lower the heat.

f. Taste and put down and serve.
