How to Make Otong Soup: A Favourite of the People of Cross River

Do you like eating soup? If so, you’ll probably love otong soup. People in Nigeria’s Cross River State love this delicious food. It is made with fish, okra, and tomatoes and has a flavour that is sure to please your taste buds.

Needed Ingredient

A variety of meat

Fresh okra

1 tablespoon palm oil

Stockfish, Crayfish

1 onion bulb, Ugu (chopped)

Uziza (chopped)

Scotch bonnet peppers

Cubes for seasoning

Salt

Method

Mix your different kinds of meat with stock, sliced onion, seasoning cubes, and salt in a pot of water. Let it boil until the meat is cooked through.

Wash your okra, cut it up, and set it aside. Soak the smoked fish in hot water to get rid of dirt and set it aside.

Pour in the palm oil and let it cook for 3 minutes. Then, add the pepper and crayfish mixture and let it cook for 5 minutes. Then add the smoked fish and steam it for 2 minutes.

Mix in the chopped okra and let it cook for 2 minutes.

Add the uziza and steam it for 1 minute. Then add the ugu and cook it for 2 minutes.

Serve it with your preferred drink.
