Ingredients Required
2 tablespoons of coconut oil.
Unsweetened coconut milk
Tomatoes (blended or sliced)
Onion (chopped)
2 cloves of garlic (diced).
Red bell pepper (diced)
2 tablespoons of lemon juice
Cilantro (chopped)
Salt

Method
Peel off the shrimp, then slice and set aside.
In a saucepan, heat oil over medium heat. Pour in the garlic and pepper and stir for 1 minute. Add the onion, salt, and seasoning cubes and stir-fry for 5 minutes.
Allow the tomatoes and lemon juice to boil for 10-15 minutes.
Stir in 14 of the coconut milk and allow it to simmer—thin the stew by adding water and allowing it to simmer. (Taste for salt and seasoning).
Add the shrimp and cook for 10 minutes. Stir in the remaining coconut milk and bring to a simmer.
Put in a serving basin and top with cilantro.or parsley and then serve with rice or bread.
